Abstract
利用气相色谱-质谱联用(GC-MS)对4种不同用途商品小麦面粉脂肪酸成分进行鉴定与分析.结果表明,4种商品小麦面粉共鉴定出4种脂肪酸成分,其中棕榈酸、亚油酸、油酸、硬脂酸的平均含量分别为0.0387%、0.1125%、0.0385%和0.0031%;4种商品小麦面粉的脂肪酸比例(SFA/M[-FA/PUFA)为(1∶0.80~ 1.00)∶(2.60~2.80).通过进一步比较分析,不同用途商品小麦面粉中脂肪酸成分含量存在一定差异.
