大米食味因子与电化学信号的相关性研究

Abstract
采用基于方波伏安法的装置采集大米电化学信号,对电化学信号进行小波去噪后,对电化学信号和大米食味因子进行相关性分析.结果显示:Au、Pd、Cu、Pb、Cd、In、Ni、Fe、W、Ti的电化学信号均同大米直链淀粉含量负相关,同支链淀粉含量和支直比正相关;而Al电极在某些电位点处同直链淀粉含量正相关,某些电位点处呈负相关,对支链淀粉和支直比情况类似.
