Abstract
花生芽中不仅含有丰富的蛋白质、脂肪、维生素、矿物质等营养成分,还含有丰富的白藜芦醇,把花生芽添加到低温乳化肠中开发出新的产品,有利于扩大花生芽豆的应用范围,丰富我国肠类制品的种类。本实验对低温乳化肠中添加花生芽进行了研究,经单因素和正交试验确定花生低温乳化肠的最佳配方为:猪肉55%,花生芽8%,大豆蛋白5%、玉米淀粉6%、卡拉胶0.5%、复合磷酸盐0.5%、食盐2.5%、香辛料1%、味精0.3%、白糖2%、红曲红色素0.05%、冰水19%。
