在卫生监督中我们发现,市场上有些酱油含有1,3-二氯 -2-丙醇(1,3-Dichloro-2-propanol,简称1,3-DCP).1,3- DCP是由植物蛋白酸在水解过程中伴随发生的产物,世界卫 生组织证明1,3-DCP具有致癌性,国际上已有多个国家把1, 3-DCP作为有害指标进行严格的监测.据报道,1,3-DCP 的分析方法多采用毛细管测定方法[1].而本文采用大口径毛 细管进行分离测定.本法操作简单、快捷,可作为日常检测方 法.现介绍如下.
