Research on Electrode Corrosion Law and Mechanism in Pulsed Electric Field food processing

In pulsed electric field (PEF) processing of Iiquid foods, unavoidable electrochemical reaction occurs between the electrode and the surface of the solution in the treatment chamber. This may lead to corrosion of the electrodes of treatment chamber, which may seriously affecting food safety. This paper uses accelerated corrosion experiments to explore the electrode corrosion law under the action of a high-voltage nulsed electric field. The effects of pulse waveforms. electrode materials, and the oxide layer on the electrode surface on electrode corrosion are studied. Experimental results showthat when the pulse waveform applied to the treatment chamber has a small negative voltage offset. the degree of electrode corrosion can be greatly reduced. At the same time, when an inert metal is used and a metal oxide layer is plated on the metal surface, it can also effectively protect the electrode from corrosion; Corrosion in areas with high current density is more severe. Finally, measures to suppress or reduce corrosion are proposed by studying the electrode corrosion laws. This work laid a solid foundation for the large-scale application of pulsed electric field food processing technology.
