Abstract
The paper researched dynamic changes of the Dominant pigments and relevant metabolites in different parts during the development and maturation of tomato fruits. The results showed that the contents of chlorophyll decreased during the development of tomato fruits, but carotenoids contents increased. When tomato fruits ripened, the maximum lycopene content was in the peripheral pericarp, and the maximum [beta-carotene content was in locular gel. The maximum contents of glucose and total sugar were in peripheral pericarp. GA3 contents decreased rapidly in the early ripening stage, then began to decrease gradually, at last it reached the minimum at ripening stage. The minimum GA3 contents in mature fruits were in peripheral pericarp. The change of ABA contents which stayed in a low level in all parts was like a bimodal curve during the whole ripening stage.
