•Argon & nitrogen ACP potential were evaluated to inhibit the WG lipolytic enzymes.•The achievement of ACP was a function of the input gas and the treatment time.•Argon was more useful to reduce the lipase activity than nitrogen in ACP treatment.•Antioxidant activity and phenolic content reduced after thermal processing in WG.
