•FAD2, FAE1, FAD3, and KASII mutants were identified from an EMS camelina population.•Mutations in individual genes yielded small changes in seed oil fatty acid composition.•A mid-oleic acid oil was generated by stacking four fad2, fae1, and fad3 mutants.•Oxidative stability of camelina oil was enhanced in the mid-oleic acid gene stack.
