•Bioreactor and starter culture implementation in coffee processing require an investment of US$1.4 mi.•Production costs increase US$ 0.74 in comparison to conventional processing.•Bioreactors and starter cultures are the main factors for rising the costs.•Coffee produced in bioreactor can be sold at 16-fold the estimated commodity price.•The techno-economic analysis showed a favorable scenario for specialty coffee production.
