Blend of renewable bio-based polymers for oil encapsulation: Control of the emulsion stability and scaffolds of the microcapsule by the gummy exudate of Prosopis nigra

•Characterization of Prosopis nigra tree gum-based renewable material was performed.•PN-biopolymer formed stable emulsions over time and against thermal treatments.•PN-biopolymer showed good antioxidant properties for labile compounds protection.•PN-biopolymer/alginate blend was successfully used for oil encapsulation.•PN-biopolymer is key to orderly alginate crosslinking by control emulsion stability.
