Abstract
•Sorghum grain was used as raw material for ethanol production.•80.38 % theoretical ethanol yield was obtained with Ethanol Red yeast in simultaneous saccharification and fermentation.•25 % less volatiles were determined in distillates from simultaneous saccharification and fermentation with Ethanol Red.•Simultaneous gelatinization and liquefaction in separate hydrolysis and fermentation increased volatiles in distillates.•Enzyme complexes were weakly associated with volatile compounds.
