•Modelling recreated the observed protein decline in winter wheat and spring barley.•The main causes were plant breeding and environmental restrictions on fertilization.•Warmer and wetter weather contributed to the reduced protein content.•Reduced N-mineralization contributed to reduced protein content in some soils.
