•972 wine consumers evaluated 76 (red, white, rosé, sparkling) wines.•Wines were evaluated using projective mapping and ultra-flash profiling.•Participants mainly used attributes to describe the taste and aroma of the wines.•Participants distinguished wines based on the sweetness and bitterness.•Very few terms were identified by the participants describing the mouthfeel and appearance.
