Fruit Colour Evolution of Three Spanish Pomegranate Clones

In this work the evolution of the external colour of pomegranate during its ripening on the tree has been studied, in three cultivars of pomegranate cultivated in homogeneous conditions. We have also studied the indexes of: saturation (C*), metric angle of tonality (h*(ab)) and index of colour (I*(c)). The results show that the cultivar of the most intense coloration and therefore more attractive for the consumer was 'ME15' and the best index to explain the evolution of the colour was I-c*, whereas C* and h*(ab) together show the point of inflexion of coloration from green to red.
