Plant secondary metabolites are usually associated with plant defence and exposure of plants to stress factors is known to influence the levels of plant secondary metabolites by direct or indirect activation of metabolic pathways. Glucosinolates are a group of plant secondary metabolites that are largely responsible for the typical pungent flavour of brassica vegetables and are believed to function as a part of their defence mechanisms. In addition, these metabolites are known to have antimicrobial, antioxidant and anti-carcinogenic properties upon regular consumption of brassicas. Since the last three decades, the health promoting properties of brassica vegetables, broccoli in Particular, have gained particular interest. The anti-carcinogenic activity is largely related with the bioactive breakdown products of glucosinolates. In the current study, effect of low temperature treatments on aliphatic and indole glucosinolates in broccoli was investigated.
