•Fenugreek, baobab and moringa have variable rich sources of iron.•Moringa and fenugreek sprout showed high bioaccessible and bioavailable iron.•Baobab fruit pulp alone did not inhibit iron uptake from FeSO4 and FAC.•Synergistic interactions of enhancers promote iron availability in plants.
