Thermoanalytical investigations of honey produced by Trigona species using differential scanning calorimetry (DSC)

Thermal behavior of Colombian honeys produced by stingless bees Trigona (Tetragonisca) angustula, T. (Frieseomelitta) nigra, Scaptotrigona sp. and Nannotrigona sp. were studied through a year using Differential Scanning Calorimetry (DSC). Honey samples were collected every three months, during August 2014 to August 2015 and showed several thermal transitions (trs(1), trs(2), trs(3), trs(4a) and trs(4b)): T. angustula (trs(1) - trs(4b)), T. nigra (trs(1), trs(2), trs(3) and trs(4a)), Scaptotrigona sp. (trs(1), trs(2), trs(3) and trs(4a)) and Nannotrigona sp. (trs(1), trs(2), trs(4a)). Statistical analysis showed significant differences between and within species in some thermal transitions.
