Relationships between optical properties of peach flesh with firmness and tissue structure during storage

•Optical properties at 400−1050 nm of peach flesh during storage were presented.•Microstructure changes of peach flesh were observed.•μa and μ’s were highly related to the firmness and tissue structural parameters.•Compared the correlation between tissue structural parameters and optical properties.•μ’s has potential in evaluating the firmness and microstructure of peach flesh.
