•Liquorice extract was tested as natural additive in rabbit diets and meat patties.•Rabbit performance, gastrointestinal pH, caecal count, carcass traits were studied.•The tested liquorice extract did not improve rabbit performance traits.•Dietary and in-meat combination had the best antimicrobial effect on meat patties.•Meat sensory traits were not modified by the dietary inclusion of liquorice extract.
