摘要

•Amylopectin nanoparticles (APNPs) were developed to deliver anthocyanins.•Microstructural changes were observed under various environmental conditions.•The nanoparticles protected anthocyanins from degradation.•APNPs can be used for anthocyanin delivery in medical and cosmetic fields.
