•Pulque is an alcoholic probiotic beverage with 3 days shelf life when refrigerate.•Conventional pasteurization drastically decreases Lactobacillus sp. (probiotics).•Ohmic heating preserved probiotic and organoleptic quality to 22d when refrigerate.•Electroporation generated by the OH contributes to inactivate microorganisms.•Ohmic heating is a friendly & simple technology for increasing shelf life of pulque.
