Abiotic factors during a one-year vegetation period affect sage phenolic metabolites, antioxidants and antimicrobials

•The contents of individual phenolics vary between different collecting periods.•Sage phenological stage had a strong influence on the rosmarinic acid content.•Concentration of individual phenolics affect the antioxidant capacity of samples.•Sage extracts are an efficient inhibitors of food spoilage and pathogenic microorganisms.•High temperature and low rainfall result with a higher amount of phenolics.
