•Hydrogel was formed with Hymenaea courbaril XG using Na2SO4 as kosmotropic salt.•Increasing the addition of SO42− and heating caused conformation changes in XG.•Hydrophobic sites on XG are sensitive to heating and/kosmotropic salts.
