摘要
•A laboratory scale freezer was developed and offers uniform freezing conditions.•Tylose dehydration due to freezing was studied for mechanical and cryogenic freezing.•Repeatable results of weight loss and temperature measurements were obtained.•Relation between weight loss and surface temperature during freezing is illustrated.
