Integrating harvesting decisions in the design of agro-food supply chains

•We present a generic supply chain design model for agro-food industrial supply chains.•The model is applied to the case of a sugar beet processing chain in the Netherlands.•Opportunities exist in the case to improve the economic and environmental performance.•Harvesting decisions affect supply chain design when yields vary largely in time.
