•A relative permittivity sensor for microflows of high-pressure fluids is presented.•The sensor allows for composition control of high fluidity fluids in microfluidics.•CO2-expanded ethanol was produced with tunable εr between 1.72–21.40.•Using the sensor, a closed control system was realised.
