•Pullulan was modified with β-cyclodextrin via “click” chemistry.•Nanoparticles were created via self-assembly with an adamantane-modified dextran.•The sub-100 nm particles were characterized using small-angle X-ray scattering (SAXS).•Polymer molecular structure and host-guest ratio strongly affected particle properties.
