•The biopolymer extracted from the fish byproduct presented major fractions of myosin and actin.•The optimal condition obtained by CCRD was the formulation with 0.79% proteins and 40% plasticizer.•RSM proved fully adequate for characterizing bioplastics.•The myofibrillar proteins from fish byproduct were effective to obtain bioplastics.
