泸曲中两株高产糖化酶菌的分离鉴定与初步应用

Abstract
采用传统微生物分离手段从泸曲中分离得到6株霉菌。其中,糖化酶活性最高的两株菌njsys-3与njsys-6的酶活分别达到了1842 U/g、2349 U/g;分子生物学鉴定结果表明,nisys-3为棒曲霉、njsys-6为黑曲霉;大曲生产试验表明,njsys-3(棒曲霉)种子液添加量达到6‰时,大曲糖化力提高26.9%;njsys-6(黑曲霉)种子液接种量达到6‰时,糖化力趋于稳定,提高34.1%左右,且能增加曲香。
