Abstract
以甜荞麦皮为原料提取荞麦皮色素.采用乙醇水溶液为溶剂,通过单因素试验和正交试验分析,结果表明:浸提温度对色素提取量的影响最大,其次为乙醇浓度和料液比.荞麦皮色素提取的最佳条件为乙醇溶液体积分数65%,料液比1:50,提取温度80℃,提取时间1 h,在该条件下荞麦皮色素提取率达到6.71%.
