Abstract
采用自制平行电极板检测花生油加热及贮存过程中介电特征值电容、电感和阻抗的变化情况,用国家标准分析方法测定其酸价、过氧化值、碘值、羰基价、皂化价5种品质指标,分析花生油品质参数与介电参数之间的相关性。结果表明:花生油的介电特性参数电容、阻抗与电感值与其品质参数过氧化值、酸价及羰基价具有线性关系,其实际测量值与计算值的误差在允许范围内,用检测出的介电参数值计算花生油品质指标从理论上是可行的。
