摘要
•The physical properties of a novel galactomannan (EGSP) were studied.•The effects of EGSP on starch digestion and glucose diffusion in vitro were studied.•In vivo experiment proved that EGSP could reduce the glycemic index of starch.•The mechanism of EGSP regulates postprandial blood glucose was discussed.
