摘要
•Naringinase was obtained from a newly isolated strain of Aspergillus oryzae.•Nariginase is a single protein with α-l-rhamnosidase and β-d-glucosidase activities.•Several flavonoids could be transformed by naringinase.•The naringin in citrus juice and wine can be efficiently hydrolyzed by naringinase.
