•The effect of UV-B radiation dose and intensity on broccoli quality was tested•Exposure to low UV-B doses and intensities delayed chlorophyll catabolism.•High intensity (HI) UV-B treatments transiently increased antioxidant capacity.•HI UV-B prior to freezing improved broccoli nutritional quality.
