Abstract
通过紫外可见分光光度法,对紫叶桃叶片色素种类进行初步鉴定,同时对叶绿素、类胡萝卜素和总黄酮含量进行计算;通过高效液相色谱法,对单体酚种类和含量进行了定性定量分析,旨在为食品、药品行业筛选更具前景的天然色素.结果表明:紫叶桃叶片中主要含有矢车菊素半乳糖苷、矢车菊素、槲皮素、芦丁、叶绿素、类胡萝卜素、杨梅素、绿原酸、儿荼素、表儿茶素、木犀草素、二氢杨梅素、二氢槲皮素、对香豆酸等.其中,矢车菊素及矢车菊素半乳糖苷为其叶片呈现红色的主要色素,含量分别为122.30 mg·kg-1和507.60 mg·kg-1,相对含量占检测色素总合量的1.81%,是一种良好的天然色素.叶绿素起着使紫叶桃叶片颜色加深的作用,类胡萝卜素、槲皮素、芦丁等起着辅助成色的作用.
