Extractions and Activities Determinations of Lectins from Five Mushrooms

In this paper,lectins from five kinds of mushrooms(Pleurotus eryngii,Flammulina velutiper,Ganoderma lucidum,Lentinus edodes,Hericium erinaceus) were extracted and the activities were measured.The results showed that the lectins from different edible mushrooms had different agglutinative activities to chicken red blood cells.The extracts from Flammulina velutiper had the strong activities while that from Pleurotus eryngii had no agglutinative activity.The activities of Lentinus edodes and Hericium erinaceus were relatively equal.The lectin extracts from different mushrooms could be inhibited by different sugars,implying that they had individual carbohydrate-binding specificity.The tested lectins were stable under 70℃.
