Abstract
Objective: To study the optimum proportion of alliin and ailiinase as well as the stability of allicin in order to provide a basis for the new drug design. Methods: In the presence of alliinase, allicin and acetonic acid are formed from the precursor alliin. Analysis of the optimum, proportion and time-distance curve of alliin and alliinase in 13 hours by high performance liquid chrornatography (HPLC). Results: The ratio of 2. 0 to 1. 0 is the optimum proportion of alliin and alliinase. In the optimum ratio, 92. 8% of alliin is transformed completely in 15 minutes. Stability of allicin over a period of nearly 13 hours. Conclusion: In vitro . the allicin in the pharmaceutical preparations of alliin and alliinase Stability over a period of nearly 13 hours.
