Abstract
•An arabinogalactan protein (AGP) with unusual structure has been isolated from Aegle marmelos fruit gum.•Oligosaccharides symbolizing AGP fine structure has been generated and characterised.•In vitro antioxidant activity of this AGP is comparable to standard antioxidants.•This AGP can form soluble electrostatic complex with β-lactoglobulin.•Its antioxidative activity meets condition suitable in designing novel functional foods.
