•Water soluble polysaccharides (WSP) are a good source of food ingredients.•Extraction temperature affects the characteristics of Grifola frondosa WSP.•WSP shows similar monosaccharide composition but with different molecular weight.•(1→3, 1→6)-β-d-Glucan content increased with increasing extraction temperature.•High extraction temperature can improve the quantity and quality of WSP.
