•Amorphous ternary nanoplex of curcumin-chitosan-hypromellose is successfully formed.•Hypromellose addition produce larger nanoplex with lower zeta potential and payload.•Curcumin nanoplex with hypromellose has superior solubility enhancement.•Curcumin nanoplex with hypromellose is stable during long-term storage.•Curcumin nanoplex with hypromellose has minimal cytotoxicity to human gastric cells.
