•Encapsulation of resveratrol on barley and yeast β-glucans and lecithin.•Emulsification methods high-shear, high-pressure and high-pressure and temperature.•Particle size below 100nm with all encapsulating materials and processes.•Encapsulation efficiency higher than 70%, except for barley β-glucans.•Antifungal activity against B. cinerea with the formulations containing β-glucans.
