•Guar and locust bean galactomannans carboxylation were performed with catalyst TEMPO.•TEMPO-mediated reaction on both GMs shows a preference to oxidize Man.•TEMPO-mediated oxidation follows a first order kinetics, higher to LBG than GG.•Man OH-6 accessibility in LBG could be related with a two times faster reaction than GG.
