Comparative heterogeneity, molecular weights and viscosities of xanthans of different pyruvate and acetate content

Characterizing the molecular weights of xanthans is difficult due to their particularly large size, high degree of non-ideality and low overlap concentrations. This is dealt with using modern analytical ultracentrifugation, and is applied to the issue of the effect of pyruvate content of these substances.
