•Starch amylolysis is addressed using a fitting function and multivariate analysis.•Starch structure features and amylolysis kinetics relationships are quantified.•Model-based classifying of starch amylolysis from structure gives promising results.•Crystallinity type (A, B) affects susceptibility and resistance to α-amylase action.•Amylose content is highly related to the amylolysis rate retardation.
