Abstract
研究了pH、不同糖浓度、温度、光照、紫外线、核辐射、磷酸氢二钠-磷酸二氢钾缓冲溶液、维生素C、氧化剂过氧化氢、还原剂亚硫酸钠、防腐剂苯甲酸钠等对紫叶变叶木红色素稳定性的影响.研究结果表明,紫叶变叶木红色素是一种抗还原、耐酸碱、耐糖、耐热、耐光照的良好天然色素,具有良好的开发价值.
