Instant controlled pressure drop texturing for intensifying ethanol solvent extraction of olive ( Olea europaea ) leaf polyphenols

•RSM was used to pertinently optimize ethanol extraction of olive leaf polyphenols.•DIC texturing is a relevant way to intensify olive leaf-based polyphenol extraction.•Response surface has been a relevant methodology to optimize DIC conditions.•UPLC was very effective to identify the profile of olive leaf polyphenol extract.•The new microstructure of DIC treated olive leaves implies better solvent extraction.
