Abstract
Intramuscular variation in the appearance of postmortem bovine semimembranosus has been reported earlier. Although previous research suggested muscle biochemistry as the underlying reason for this phenomenon, limited studies were undertaken in this aspect. We examined the functionality of mitochondria and profile of sarcoplasmic proteome isolated from outside (OSM) and inside (ISM) regions of bovine semimembranosus muscle. Semimembranosus muscles were obtained from eight ( n =8) Bos taurus animals after harvest, and each muscle was separated to ISM and OSM. A randomized complete block design was used in this experiment, where each animal served as a block.
