Phosphatidylcholine, an edible carrier for nanoencapsulation of unstable thiamine

•Phosphatidylcholine is an edible encapsulant for thiamine.•Encapsulated nanoliposomes were 97% efficient.•It leads to better poly dispersity index, high shelf life and stability.•Thiamine encapsulation can be a better approach to treat beriberi and polyneuritis.
