•The successful enzymatic synthesis of an L-arabinose ester in DMF.•The sugar ester presents surface activity and can be used as a biotensoactive.•The obtained ester has undergone radical polymerization.•The polymer is water soluble with potential application as biocompatible and biodegradable materials.•The PVA: poly(4-O-vinyl adipoyl L-arabinopyranose-co-5-O-vinyl adipoyl L-arabinofuranose) was not reported in the literature.
