Abstract
将不同护色剂处理后的苦荞麦在40℃的条件下储藏30天测定其色度,护色剂在最佳处理条件下对苦荞麦护色效果显著,△a*值最小,仅比原始样品的△a*值增大了0.07,最大限度地保持了苦荞麦的原有色泽。
